Winding snowshoe trails through mature forest with wonderful snow on a three hour fast paced hike with the Thursday gang. Streams with beautiful openings of black water. One stream even had a giant pancake in it, but it wasn’t quite cooked through yet. Lunch at River Valley Market with the likes of chicken chipotle sweet potato soup, mac and cheese, chard, baked herbed chicken, garlic mashed potatoes, quinoa salad, crusty bread, broccoli rabe, and more. We celebrated Joe’s birthday with a blueberry cake I’d made (from the blueberries we picked in Heath last summer).
